Acidity is the fresh, mouth-watering zing in wine, the same sensation you get from lemonade or a squeeze of lime. It's what makes a crisp white feel lively and makes you want another sip.
Cooler regions, like Marlborough in New Zealand or the Mosel in Germany, tend to make higher-acid wines. High acidity also makes wine a great partner for rich food, because it cleanses your palate.
